About the Opportunity

As the Vintage Winemaker, you will oversee day-to-day vintage winemaking activities and responsibilities. You will be working directly with both the winemaking team and operational team to achieve the desired outcome for each batch, in line with the winemaking specifications and styles. This will be achieved through frequent, clear and respectful communication with all relevant parties.

A day in the life of a Vintage Winemaker at Dorrien Estate…

Liaise with Winemakers, Cellar Team Leaders and Vintage Scheduler to ensure all parties are kept abreast of changes/deviations from established plans or out of spec juices/ferments/wines
Adjust juices/ferments to specification
Check and maintain appropriate tank temperatures for setting juices and ferments
Make relevant additions to juices/ferments as per specifications (e.g. tartaric acid, fermentation nutrients, tannin)
Monitor cold settling juices and issue racking notes to cellar when desired clarity level is achieved
Taste for press cuts as required
Taste, check and approve RDV juices for transfer
Identify and manage red ferment rack and returns as per specifications
Maintain daily flotation sheet and issue flotation instructions
Create ferment sheets for the next day’s crush from the daily intake schedule and spec sheets
Update and maintain daily juice intake sheet
Prepare red ferment sheets and ensure ferment sheets are being properly maintained

What you’ll need to succeed:

Degree in Wine Science/Oenology
Minimum 2 years experience in the field of winemaking.
Working in a Team Environment
Spreadsheet Capabilities
Laboratory Experience.
Ability to interpret analytical data
Current Right to Work in Australia
