About Huntington Estate

Huntington Estate is a leading NSW Vineyard and is one of the oldest most celebrated wineries near the beautiful town of Mudgee. We process just 200 tonnes per year but produce all styles of wine, from sparkling, dry table wines and fortifieds, and are most noted for our traditional, ageing style red wines. We operate our own bottling line and most wines are proudly Estate grown, made and bottled.

Job Description

We are looking for a skilled and motivated winemaker who will report directly to the owner and chief winemaker. The assistant winemaker will be responsible for all day-to-day operations and be in charge of our small winemaking team. Responsibilities include supervising and undertaking all cellar operations including wine movements, filtering, barrel work, vintage processing, laboratory work and bottling.

The successful candidate must have a tertiary qualification in winemaking, have a detailed technical understanding  of modern winemaking, a mastery of laboratory techniques, a good understanding of wine styles and a sound palate.

Experience of vintages in Australia and overseas will be preferred but not essential, as will be a practical understanding of winery operations.

Most importantly, the successful candidate will have a singular commitment to exploring and making  quality wines.

Key Responsibilities

Be responsible for all laboratory analyses, implementation of OH&S policies and management of cellar staff

Supervise and assist undertaking all cellar procedures, from vintage to bottling operations

Undertake input and access to key software, particularly the EZY system

Liaise with contract clients and fulfill their requirements

Candidate Requirements

Hold a current winemaking degree or equivalent

Have a passion for wine and winemaking and be enthusiastic to explore our styles

An ability to work with and lead a small team

Have excellent attention to detail and commitment to quality
