Under the direction of the Winemaker, the Assistant Winemaker will coordinate, review, and participate in the activities involved in the operation of the lab and wine cellar. All company safety procedures will be applied at all times. This position will be responsible for directly maintaining the quality of all bulk inventories in addition to overseeing the daily analysis of all wines. At all times will maintain the integrity and quality of the product while adhering to the company’s philosophy and mission.

During Harvest
o Supervise all lab work – Manage all employees to include seasonal help
o Help with harvest vineyard sampling
o Enforce and practice all safety policies
o Monitor and trouble shoot fermentations (primary and secondary)
o Participate in winemaking decisions and daily tastings
o Perform general cellar work when needed
o Calculate, complete, and confirm chemical additions
o Perform analysis of grape samples as needed

Bulk wine and aging procedures
o Assist in Performing all laboratory analysis
o Perform occasional cellar work
o Track all problem lots and partial tanks
o Maintain and implement cellar Standard Operating Procedures
o Create accurate spreadsheets, as instructed by winemaker
o Perform Monthly lot analysis and additions
o Calculate, complete, and confirm chemical additions
o Order and Inventory winery supplies
o Perform bench trials

Oversee bottling functions
o Participate in bottling procedures
o Oversee that QC standards are met
o Inventory and track bottling supplies
o Prepare wines for bottling (Additions, Racking, Filtration, etc.)

Responsible for the maintenance of all record keeping
o Record information into AMS
o Update bulk and bottled inventory
o Maintain cellar, lab, and bottling logs
o Maintain safety and training manuals
o Maintain maintenance logs on all equipment
o Organize the preventative maintenance schedule on all equipment

Involved in new release tastings
o Organize blending sessions
o Participate in blending sessions, if production tasks are covered
o Oversee in-house training

Organizational
o Work with the winemaker to develop and implement cellar procedures, lab operations, and training plans.
o In the absence of the Winemaker, the Assistant Winemaker will be responsible for efficiently organizing and implementing all cellar and safety procedures as instructed by the Winemaker.

Qualification Requirements:
Bachelor’s degree in Enology, Viticulture or related field preferable
Minimum 3 yrs. experience in wine production.
Minimum of 1 yr. of lab experience
Minimum 1 yr. supervisory experience
Good computer skills Excel and Word
AMS experience preferred, but not required
Good written communication skills
Good driving record
Bi-lingual, Spanish/English desirable

Physical Requirements:
Ability to work 10-12 hour days and weekends
Ability to lift up to 50 lbs.
Ability to drive a car
Ability to drive a fork lift
Ability to stand for long periods at a time
Ability to pull, push, kneel, bend, reach
